Ftayer Bi Sabanekh

Ingredients

Paste Ingredients:
3 cups of flour.
1/2 cup of  oil.
4 teaspoon of yeast.
1 teaspoon of sugar.
1 teaspoon of salt.
1 cup of warm water.
Filling Ingredients (with Cheese):
Feta cheese or Bulghari cheese.
Filling Ingredients (with Spinach):
2 lbs. of spinach.
2 medium onions finely chopped.
2 Lemons.
2 teaspoons of pine nuts. 
2 teaspoons of salt.
2 teaspoons of pepper.
2 teaspoons of olive oil.

Directions

Preparing the Paste:
In a small bowl, add the yeast and sugar to the water. Set aside for 10 minutes.
Place flour in a large bowl. Add the yeast, sugar, salt, and a little bit of olive oil. Mix well until smooth.
Cover and set aside to rise in a warm place for about one hour.
Preparing the Filling (with Spinach)
Wash spinach thoroughly. Chop the spinach.
Mix the chopped spinach with salt 
Let it sit for about 30 minutes aside.
Squeeze out all the moisture from the spinach mixture.
Add the salt, pepper, lemon juice, chopped onions, pine nuts, and olive oil to the mix.
Putting the filling in the paste:
Cut dough into small pieces, the size of walnuts. Roll into balls.
Let it rest for about 10 minutes.
Roll each dough ball into a flat circle.
Put a spoon of the filling on the center, keeping the edges of the dough dry.
Fold into a triangular shape.
Place the spinach pies on baking pans greased with olive oil.
Brush the tops of the pies with olive oil.
Bake in a 350F oven until the bottoms are golden brown about 15-20 minutes.
Broil until tops are golden brown too.
