Ingredients
1 Eggplant. 1 Lemon Juice. 2 Cloves of Garlic. 4 Spoons of Tahini Sauce. 1 Bunch of Parsley. Salt, Pepper.
Directions
Grill Eggplant till it is soft. Use the stem of the eggplant to rotate while grilling. Wash in cold water, then peel the Skin. Mash it in a food processor. Gradually add lemon juice and Tahini to the eggplant in the food processor. Add Crushed garlic, and salt to the mix. Garnish with chopped parsley.
